Guaca Go didn't start as a restaurant concept. It started with the island breeze, a tour bus, and two people who believed food could be better.
We Met in
the Keys
Founders Carson Bennett and Amber Benjamin met while working as tour guides, traveling the country together and sharing long days, longer conversations, and a deep love for the outdoors. What began as a job pairing quickly became a partnership with a shared belief that the best experiences are simple, intentional, and made with heart.
When their touring days came to an end, South Florida called them home. And that's where everything changed.

It All Began as a Roadside Cart
Before Guaca Go was a brand, it was a cart.
In the Florida Keys, just off the road near the Caribbean Club, Carson and Amber set up a small stand and started selling fresh guacamole — made by hand and served simply to anyone who stopped by. No kitchen. No shortcuts. Just ripe Florida avocados, salt, citrus, and a belief that real food didn't need much else.
That's where everything began.
Over time, they became what they lovingly call "guactologists," mastering avocado varieties, seasons, and sourcing to deliver the freshest, best-tasting guacamole possible year-round.
This wasn't trend-chasing. It was respect for the ingredient and the people eating it.



From Pop-Ups in Movement
Guaca Go officially launched in 2017 as a South Florida events and catering concept, bringing bold, healthy, customizable food to festivals, gatherings, and communities hungry for something different.
The response was immediate.
People didn't just love the food, they loved the energy. The freshness. The fact that guac wasn't an upcharge. The feeling that this brand got it.
By 2020, one question kept coming up: "When are you opening a restaurant?"
So they did.

The first Guaca Go restaurant opened with a simple but radical idea: Every bowl comes with guacamole. Period.
No compromises. No gimmicks. Just fresh, clean ingredients, bold flavor, and a menu built for real life.
Today, Guaca Go operates locations in West Palm Beach and Delray Beach, with Tequesta opening in early 2026 — and more growth on the horizon.
